Chef K's Big Easy Red Beans & Rice

Ingredients

2 cups chopped yellow onion

1 1/2 cups chopped celery

1 1/2 cups chopped green bell pepper

1 cup sliced carrot
-
1/2 Tbsp garlic salt
-
1/2 teaspoon crushed red pepper

3 cups cooked red kidney beans

3/4 cup unsalted vegetable stock
-
1/2 teaspoon ground red pepper
-
1/4 cup chopped fresh flat-leaf parsley

3 cups hot cooked brown or wild rice
Here's what's next...

Heat a skillet on medium-high heat. Add in onion, celery, bell pepper, carrot, and garlic salt; cook 8 minutes.

Add beans, stock, and crushed red pepper to mixture in pan. Bring to a simmer; cook 8 to 10 minutes or until vegetables are tender, stirring occasionally.

Divide rice among 6 bowls; top evenly with bean mixture. Sprinkle with 1/4 cup parsley.
