Chef K's Big Easy Red Beans & Rice

Ingredients

  • 2 cups chopped yellow onion

  • 1 1/2 cups chopped celery

  • 1 1/2 cups chopped green bell pepper

  • 1 cup sliced carrot

  • 1/2 Tbsp garlic salt

  • 1/2 teaspoon crushed red pepper

  • 3 cups cooked red kidney beans

  • 3/4 cup unsalted vegetable stock

  • 1/2 teaspoon ground red pepper

  • 1/4 cup chopped fresh flat-leaf parsley

  • 3 cups hot cooked brown or wild rice

Here's what's next...

  1. Heat a skillet on medium-high heat. Add in onion, celery, bell pepper, carrot, and garlic salt; cook 8 minutes.
     

  2. Add  beans, stock, and crushed red pepper to mixture in pan. Bring to a simmer; cook 8 to 10 minutes or until vegetables are tender, stirring occasionally.
     

  3. Divide rice among 6 bowls; top evenly with bean mixture. Sprinkle with 1/4 cup parsley.
